Banana + Salted Caramel Spelt Muffins

For the dry ingredients
- 2 cups White Spelt Flour
- 1 cup Sugar of choice
- 1 + ½ tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Salt
- 1 tsp Cinnamon
For the wet ingredients
- 1 tbsp Ground Flaxseed (mixed with 3 tbsp Water)
- 3 Large Bananas, mashed
- ½ cup Vegetable oil
- ½ cup Coconut Milk
- 2 tsp Vanilla Essence
- 1 block of Loving Earth Salted Caramel Chocolate, roughly chopped
- Step 11. Preheat oven to 170º.
- Step 22. Whisk together the dry ingredients.
- Step 33. Whisk together the wet ingredients (except chocolate) until well combined.
- Step 44. Fold the wet ingredients into the dry and mix until just combined – do not overmix!
- Step 55. Divide into a lined muffin tray and bake for 30-40 minutes until a toothpick comes out clean.
Any idea the nutritional value on this? Maybe even sans the chocolate? Thanks! Looks so good.
