Chocolate Chickpea Cookies

- 1 can chickpeas, rinsed and drained (1½ cups chickpeas)
- ½ cup crunchy peanut butter
- ⅓ cup Coconut Nectar
- 1 teaspoon baking powder
- 1 teaspoon Vanilla Powder
- a pinch of salt
- ½ cup chocolate chips (I used chunks of Loving Earth chocolate)
- ½ cup of peanuts, roughly chopped
- 50g Caramel Chocolate, melted
- Step 1Pre-heat oven to 175C. Line a baking sheet with a silicon baking mat or parchment paper.
- Step 2In a food processor or blender combine the chickpeas, peanut butter, coconut nectar, baking powder, vanilla powder, and salt. Blend until very smooth, scraping down the sides as needed.
- Step 3Fold in chocolate chips and peanuts. Roll into balls and flatten cookies. Bake for 10 minutes until lightly golden but not crunchy.
- Step 4Drizzle melted caramel chocolate over and enjoy warm or at room temperature!
