A tropical take on the classic Poached Pear.. topped with melted caramel !!

Spiced Hibiscus Poached Pears

- 80g (1 block) Loving Earth Salted Caramel Chocolate
- 4 pears
- 10 hibiscus flowers (approx.)
- 3 star anise
- 1 cinnamon stick
- 2 tbsp. maple syrup
- ½ cup of coconut blossom (optional)
- edible flowers (optional)
- Step 1Peel the pears carefully, slice in half and remove the seeds with a melon baller or small, sharp knife. Add them to a pan of water with the hibiscus, star anise, maple syrup and cinnamon and poach until tender, approx. 20-25 minutes. Take some or the remaining poaching liquid (about 1 cup) and add half a cup of coconut blossom and reduce to a syrup (optional).
- Step 2As the pears are poaching, place the chocolate in a heat proof bowl. Next, place the bowl over a pot filled with water, which you heat gentle over the stove. Please make sure the bottom of the bowl doesn’t touch the water as the chocolate can become a bit gritty otherwise. Let the chocolate melt completely in the bowl over the pot with hot water.
- Step 3To serve, fill 4 small bowls with even amounts of the melted salted caramel chocolate. Place the poached pear halves on top. Decorate with edible flowers and enjoy!
