Kale Falafels

- 1 cup of Activated Walnuts
- 400g chickpeas
- 1 cup coriander
- 1 bag of Kale Chips
- 2 tbsp tahini
- 2 tbsp tamari
- ¼ cup olive oil
- ¼ cup water
- 2 tbsp flour (or your preferred alternative)
- 1 tsp baking powder
- 1 tsp cumin
- Step 1Process all ingredients in a blender until nice and smooth, you might need to scrape down the sides as you go to make sure everything is well incorporated.
- Step 2Place in the fridge for at least ½ an hour, keeping them in overnight is fine too!
- Step 3Roll into tablespoon sized balls and place on a tray lined with baking paper, sprinkle with sesame seeds and bake for approximately 20 minutes, turning once.
- Step 4Enjoy with a fresh crunchy salad, some roasted eggplant, olives and hummus if you have it!
