Citrus and fennel are an old time classic combination. In this salad they make a refreshing combination when combined with the mildly sweet dressing and fragrant mint. Perfect as a light lunch or even a post dinner snack when you are after something sweet and refreshing!

Citrus & Fennel Salad

- 2 oranges
- 1 lemon
- 1 fennel bulb
- juice of 1 lemon
- ¼ cup of Coconut Nectar
- ¼ cup of olive oil
- pinch of salt and pepper
- ¼ tsp of powder ginger or finely grated fresh ginger
- 2 tbs of sunflower seeds
- 1/4 cup of Activated Almonds
- 2 tbs of Activated Pumpkin Seeds
- mint sprigs to garnish
- Step 1Prepare your citrus by removing the skin and as much of the white pith as you can manage with a sharp knife.
- Step 2Slice into ½ a centimetre, or smaller, rounds.
- Step 3Finely slice your fennel bulb using a sharp knife or a mandolin.
- Step 4Place the citrus on your serving tray in an even formation, scatter with the fennel.
- Step 5Mix the Agave, oil, lemon juice, salt and pepper and ginger. This will make more than enough dressing for another salad, pour your desired amount onto the prepared citrus.
- Step 6Roughly chop your nuts and seeds and sprinkle on top, scatter with some freshly torn mint leaves, serve immediately!
