Jo's Green Soup

This is Jo's detox green soup recipe that she often makes in the office for the week ahead. After this photoshoot we all devoured it for morning tea... safe to say this is a firm favourite recipe for Winter 2019! Double up the recipe and freeze for quick mid week meals.
- 1 x head of broccoli
- 1 x zucchini
- 1 x cup of peas
- 4 x stalks of celery
- 1 x clove of garlic (optional)
- Juice of 1 lemon
- 500ml veg stock
- ΒΌ tsp salt
- Pepper to taste
- Coconut yoghurt/olive oil/chopped almonds/hot sauce to serve
- Step 1Chop broccoli, zucchini, and celery into even sized pieces. Crush garlic clove.
- Step 2Pour stock into pot and add chopped veg, garlic, salt, pepper and chilli flakes. Bring to the boil and let simmer until veg is soft.
- Step 3Add peas and lemon juice and let simmer for 2 minutes.
- Step 4Remove from heat and blend with stick blender OR leave as is if you prefer a chunky soup!
- Step 5Serve with 1 tbsp. of coconut yoghurt, drizzle of olive oil, chopped almonds and hot sauce. Enjoy!
