Vegan + Gluten Free Florentines

Vegan Gluten Free Florentines
- 2 tbsp almond butter
- 2 tbsp soy milk
- 2 tbsp Loving Earth Coconut Oil
- ½ cup Loving Earth Coconut Sugar
- ¼ cup golden berries
- 3 tbsp gluten free flour
- 1 cup blanched slivered almonds
- 2 tbsp pistachios
- Loving Earth chocolate of choice for coating.
- Step 1Preheat oven to 140C.
- Step 2Place the almond butter, soy milk, coconut oil and coconut sugar in a small saucepan, stir over medium heat and bring to a light boil, then allow to cool slightly.
- Step 3Roughly chop the almonds, golden berries & pistachios and place in a bowl, add the flour and wet mixture, stir to combine.
- Step 4With wet hands form 1 tbsp balls and place on a baking sheet leaving 5cm room in between
- Step 5Bake for 10 - 15 minutes or until golden brown.
- Step 6Melt your favourite Loving Earth chocolate and drizzle over the Florentines or just coat the bottom.
