Summer Berry Rice Paper Rolls

- 10 – 12 rice paper wrappers
- 2-3 handfuls of strawberries
- seeds of 1 pomegranate
- 2-3 handfuls of blueberries
- 1 handful of raspberries
- 10-15 mint leaves
- 1 bar/80g of Loving Earth Creamy chocolate
- Step 1Prepare all the berries for the rolls by washing them first. Then thinly slice the strawberries and half the raspberries and prepare the pomegranate kernels. Next fill a large, shallow bowl with warm (not boiling!) water and one by one, soak the rice paper sheets in the water for 10-20 seconds or until soft. Watch not to keep them in the water too long as they will become too fragile and may tear.
- Step 2Place the soft wrapper on the kitchen counter and fill with the berries, adding 1 mint leave per roll. Cut each roll in half and set aside.
- Step 3Next place the mandarin chocolate in a heat proof bowl. Place the bowl over a pot filled with water, which you heat gentle over the stove. Please make sure the bottom of the bowl doesn’t touch the water as the chocolate can become a bit gritty otherwise during the melting process. Let the chocolate melt completely in the bowl over the pot with hot water.
- Step 4Serve the melted chocolate in a dipping bowl with the summer berry rolls and enjoy!
