Grilled Lemon & Gubinge Popsicles With Cucumber

- Approximately 4 small lemons, sliced into 3cm slices
- ½ cup Coconut Sugar
- 1 cup water
- 1 tsp Gubinge Powder
- ½ cucumber, grated
- Step 11. Press each side of the sliced lemons into the coconut sugar to coat and then place them in a medium-hot pan. Cook slowly for 5 minutes until the coconut sugar starts to carameliseand the lemons begin to brown. Remove lemons from the pan and let cool.
- Step 22. Once cool, squeeze the juice of each lemon until you have ½ cup of juice.
- Step 33. Combine the lemon juice with the remaining coconut sugar, water and mix until well combined.
- Step 44. Add the grated cucumber into the mould and pour over the lemon mixture. Insert popsicle sticks and freeze until firm (at least a few hours, preferably overnight).
- Step 55. If you're using wooden popsicle sticks freeze them for an hour until slightly frozen before inserting the sticks.
