Coconut Mango ‘Weis Bar’ Slice

- 1 cup of Plain Buckinis
- ½ cup of Activated Almonds
- 8 fresh medjool dates, pitted and chopped
- 1 tsp Mesquite Powder
- ½ cup Shredded Coconut
- 1 tbsp Coconut Oil
- 1 tsp Coconut Nectar
- ¼ cup coconut water
- 1 cup of Raw Cashews
- ½ cup coconut cream
- flesh of 2 large or 3 small ripe mangoes
- juice of 1 lime
- 1 tbsp Coconut Nectar
- Passion fruit, extra mango and coconut to top
- Step 11. In a food processor, process buckinis and almonds until a fine crumb is reached.
- Step 22. Add dates, coconut oil + mesquite powder then process until well combined.
- Step 33. Add coconut water + coconut oil and process until a sticky base is reached.
- Step 44. Press into a lined tray and place in the freezer to set for 10 minutes.
- Step 55. Process cashews until a ‘butter’ is almost reached, it will appear to be crumbly.
- Step 66. Add remaining ingredients and blend until very smooth and creamy. Pour on top of the set base, smooth with a spatula.
- Step 77. Top with extra mango, passion fruit, coconut or any desired fruit. Place in the freezer for 4+ hours to set.
- Step 8Slice, serve and enjoy! Store in the freezer.
